Type 1 diabetes is not the same as type 2 that is more controlled with diet. Hard to say why she developed it – could be immune system attacked pancreas, could be born with little ability to produce insulin, could be a result of her earlier childhood diet, drinking cow's milk increases risk as well as feeding too many carbs (especially gluten) too soon, could have been viral, low vitamin D. You might want to get her checked for gluten sensitivity and/or celiac disease as this can be a contributing factor the the development of type 1.
I would suggest you direct alot of attention to her diet, as you will have no choice but to do this now. Get all the gluten/wheat completely out, get cow dairy products out.
As far as products I would suggest the FloraBaby probiotic formula as well as the Buddy Bear enzymes and the Buddy Bear fiber several times a day.
No I can not tell you that she will ever be able to get off insulin. If her pancreas cells that produce insulin have been destroyed there is no alternative except possibly a pancreas transplant, but that is a radical step and only done in severe situations. There are more meds involved with transplant and more complications. So she may be on insulin for the rest of her life. Wish I had better news for you.
